Kapchorua Estate, Kenya, founded 1947
High in the eastern slopes of the Nandi hills, situated in one of the most beautiful corners of the earth, lies the famed estate of Kapchorua. This estate produces some of the finest teas produced and is recognized by both the Fair Trade Labeling organization and Ethical Tea Partnership for outstanding production.
Their green is produced by a method developed and perfected on this estate. The fresh leaf is not steamed or fired as green teas are traditionally made. Instead, the leaf is first put through a CTC (cut, tea, curl) machine and allowed to sit 3 minutes before the tea is dried to stop oxidation. The result is a green tea full bodied, flavorful and without the grassiness associated with most green teas.
Keep the water temperature about 175-180 degrees and steep for 3 minutes for best flavor. Can be resteeped two more times.
